Roasted Zucchini and Chickpea Salad

Roasted Zucchini and Chickpea Salad


-       2/3 zucchini (green and yellow)
-       can of chickpeas (washed)
-       oregano
-       olive oil
-       feta cheese
-       grilled chicken or choice of protein
-       pitted olives of choice
-       lemon
-       salt
-       pepper
-       flat leaf parsley


- Cut zucchini into 0.5” rounds and sprinkle with salt, pepper and oregano.        Lightly coat with olive oil and grill on BBQ on medium for 5-7 minutes. You want the zucchini grilled but still firm for a nice crunch

- Grill chicken on seasoned BBQ or make in oven (your choice)

- Wash can of chickpeas and place into large mixing bowl

- Cut grilled zucchini rounds into quarters and toss into same bowl as chickpeas

- Cut finished chicken and mix into bowl

- Cut pitted olives in half and place into bowl

- Chiffonade flat leaf parsley and mix into bowl

- Crumble feta cheese into bowl

- Use the juice of one large lemon and squeeze over all ingredients

- Sprinkle 1 tsp of oregano into bowl with salt and pepper to taste

- Toss in 1-2 tsp of good olive oil

- Mix thoroughly

- Devour
